- 1 pound deli corned beef, chopped
- 1 can (14 ounces) sauerkraut, rinsed and drained
- 2 cups shredded Swiss cheese, divided
- 1/2 cup Thousand Island dressing
- 1/4 cup chopped dill pickles
- 8 slices rye bread, cubed
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the chopped corned beef and the drained sauerkraut.
- Add 1 cup of shredded Swiss cheese, the Thousand Island dressing, chopped dill pickles, and cubed rye bread. Mix until well combined.
- Transfer the mixture into a greased 9×13-inch baking dish.
- Sprinkle the remaining Swiss cheese over the top.
- Bake uncovered for 25-30 minutes, or until heated through and the cheese is melty and golden.
Notes
For a lighter option, try using low-fat cheese or whole-grain bread. You can also sauté the sauerkraut before adding it to enhance its flavor.
