Description

A comforting casserole that transforms the classic Reuben sandwich into a hearty dish, perfect for gatherings or family dinners.


Ingredients

  • 1 pound deli corned beef, chopped
  • 1 can (14 ounces) sauerkraut, rinsed and drained
  • 2 cups shredded Swiss cheese, divided
  • 1/2 cup Thousand Island dressing
  • 1/4 cup chopped dill pickles
  • 8 slices rye bread, cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the chopped corned beef and the drained sauerkraut.
  3. Add 1 cup of shredded Swiss cheese, the Thousand Island dressing, chopped dill pickles, and cubed rye bread. Mix until well combined.
  4. Transfer the mixture into a greased 9×13-inch baking dish.
  5. Sprinkle the remaining Swiss cheese over the top.
  6. Bake uncovered for 25-30 minutes, or until heated through and the cheese is melty and golden.

Notes

For a lighter option, try using low-fat cheese or whole-grain bread. You can also sauté the sauerkraut before adding it to enhance its flavor.
