Ingredients

  • Cooked quinoa or rice (optional)

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken with olive oil, garlic, salt, and pepper.
  2. Grill the chicken for 6-7 minutes on each side until fully cooked.
  3. While the chicken is grilling, prepare the vegetables by chopping the cucumbers, cherry tomatoes, red onion, and bell peppers.
  4. In a small bowl, whisk together olive oil, lemon juice, minced garlic, and chopped herbs to make the dressing.
  5. Once the chicken is cooked, slice it into strips.
