- 2 ripe bananas
- 1 cup oats
- 1/2 cup Greek yogurt
- 1/4 cup chocolate chips
- 1/4 cup honey or maple syrup
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 eggs
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
- Mash the ripe bananas in a large bowl until smooth.
- Add Greek yogurt, honey or maple syrup, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
- In another bowl, combine oats, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture. Stir just until combined; avoid over-mixing.
- Fold in the chocolate chips carefully.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let them cool for a few minutes before serving.
