  • 1 cup oats
  • 1/2 cup Greek yogurt
  • 1/4 cup chocolate chips
  • 1/4 cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. Mash the ripe bananas in a large bowl until smooth.
  3. Add Greek yogurt, honey or maple syrup, eggs, and vanilla extract to the mashed bananas. Mix until well combined.
  4. In another bowl, combine oats, baking powder, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture. Stir just until combined; avoid over-mixing.
  6. Fold in the chocolate chips carefully.
  7. Divide the batter evenly among the muffin cups.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let them cool for a few minutes before serving.
