Description

Delicious rolled tortillas filled with seasoned ground beef, topped with zesty enchilada sauce, perfect for family dinners or gatherings.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with diced onions until the onions are translucent, about 5-7 minutes.
  3. Add minced garlic, cumin, and chili powder to the mix. Sauté for another minute.
  4. Spoon the beef mixture onto each tortilla, rolling them tightly. Place seam-side down in a greased baking dish.
  5. Pour the enchilada sauce over the tortillas, ensuring they are well-coated, and sprinkle cheese on top.
  6. Bake uncovered for 20-25 minutes, or until the enchiladas are bubbly and golden.

Notes

Try adding sautéed bell peppers or corn to the beef mixture for extra flavor. Serve with a dollop of sour cream.
