- 8 flour or corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Sour cream (for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, brown the ground beef with diced onions until the onions are translucent, about 5-7 minutes.
- Add minced garlic, cumin, and chili powder to the mix. Sauté for another minute.
- Spoon the beef mixture onto each tortilla, rolling them tightly. Place seam-side down in a greased baking dish.
- Pour the enchilada sauce over the tortillas, ensuring they are well-coated, and sprinkle cheese on top.
- Bake uncovered for 20-25 minutes, or until the enchiladas are bubbly and golden.
Notes
Try adding sautéed bell peppers or corn to the beef mixture for extra flavor. Serve with a dollop of sour cream.
