Description

A comforting casserole featuring gluten-free Italian sausage, bell peppers, and wholesome grains, perfect for busy weeknights and family gatherings.


Ingredients

  • 1 lb gluten-free Italian sausage
  • 2 bell peppers (red and green), sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups cooked rice or quinoa

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the gluten-free Italian sausage over medium heat until browned.
  3. Add the sliced bell peppers, chopped onion, and minced garlic to the skillet. Sauté until the vegetables are tender, about 4-5 minutes.
  4. Stir in the diced tomatoes along with the Italian seasoning. Season with salt and pepper to taste.
  5. In a large casserole dish, combine the sausage and vegetable mixture with the cooked rice or quinoa.
  6. Spread the mixture evenly in the dish. Cover with foil.
  7. Bake in the preheated oven for 25-30 minutes.
  8. Remove the foil and bake for an additional 10 minutes until heated through and slightly golden on top.

Notes

For added freshness, garnish with chopped parsley or fresh basil. A side salad makes a great complement.
