- 4 bone-in pork chops (about 1 inch thick)
- 1 1/2 pounds baby potatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Season the pork chops with salt, pepper, and minced garlic.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Add the pork chops and sear for 4-5 minutes on each side until they are browned.
- Remove the pork chops and add the baby potatoes to the skillet, placing them cut side down.
- Add the unsalted butter and fresh rosemary to the skillet, stirring to coat the potatoes evenly.
- Place the pork chops back on top of the potatoes and transfer the skillet to the preheated oven.
- Bake for 15-20 minutes or until the pork chops reach an internal temperature of 145°F.
- Let the dish rest for 5 minutes before serving.
Notes
For a flavor boost, add a splash of white wine or chicken broth after searing the chops. Feel free to experiment with different herbs or spices!
