Description

A beautifully tender and flavorful beef tenderloin roast with a buttery garlic spread, perfect for any gathering.

Ingredients

Scale
  • 1 beef tenderloin (about 23 pounds)
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh herbs (such as rosemary, thyme, parsley), chopped
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine the softened butter, minced garlic, chopped herbs, salt, and pepper. Mix until well combined.
  3. Rub the garlic herb butter all over the beef tenderloin, ensuring an even coating.
  4. Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil.
  5. Sear the beef on all sides until browned, about 3-4 minutes per side.
  6. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  7. Let the roast rest for 10 minutes before slicing and serving. Enjoy!

Notes

Let the beef come to room temperature for about an hour before cooking for even cooking. Use a meat thermometer for accuracy.
