A delightful salmon dish cooked in a creamy garlic butter sauce with fresh spinach and mushrooms.

- 4 salmon fillets (about 6 oz each)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 8 oz mushrooms, sliced
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the salmon fillets with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the salmon, skin side down, and sear for 4-5 minutes per side until golden and cooked through. Once done, remove the salmon and set aside.
- Reduce the heat to medium and add butter to the same skillet. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced mushrooms to the skillet. Cook them for 4-5 minutes until they’ve softened and released their moisture.
- Stir in the fresh spinach, cooking until wilted, which should take about 2 minutes.
- Pour in the heavy cream, add the grated Parmesan cheese, and stir in the red pepper flakes if using. Allow the sauce to simmer for 3-4 minutes until it thickens slightly. Return the salmon to the skillet, spooning the creamy mixture over the fillets, and let it simmer for an additional 2 minutes. Garnish with fresh parsley and serve hot.
Notes
Use fresh ingredients for the best flavor. Consider varying the recipe with sun-dried tomatoes or asparagus for a twist.
