A delightful salmon dish cooked in a creamy garlic butter sauce with fresh spinach and mushrooms.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add the salmon, skin side down, and sear for 4-5 minutes per side until golden and cooked through. Once done, remove the salmon and set aside.
  3. Reduce the heat to medium and add butter to the same skillet. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the sliced mushrooms to the skillet. Cook them for 4-5 minutes until they’ve softened and released their moisture.
  5. Stir in the fresh spinach, cooking until wilted, which should take about 2 minutes.
  6. Pour in the heavy cream, add the grated Parmesan cheese, and stir in the red pepper flakes if using. Allow the sauce to simmer for 3-4 minutes until it thickens slightly. Return the salmon to the skillet, spooning the creamy mixture over the fillets, and let it simmer for an additional 2 minutes. Garnish with fresh parsley and serve hot.

Notes

Use fresh ingredients for the best flavor. Consider varying the recipe with sun-dried tomatoes or asparagus for a twist.
