Delightful mashup cookies that combine the flavors of graham crackers, chocolate, and marshmallows, topped with a dreamy marshmallow fluff frosting.

- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup graham cracker crumbs
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup mini marshmallows
- 1 cup marshmallow fluff (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until combined.
- Fold in the chocolate chips and mini marshmallows.
- Drop tablespoon-sized amounts of dough onto a lined baking sheet.
- Bake for 10-12 minutes until the edges are golden.
- Let cool completely.
- Once cooled, frost each cookie with marshmallow fluff and optionally toast with a kitchen torch for extra flavor. Enjoy!
Notes
For a slightly gooier center, consider underbaking the cookies. Store in an airtight container for up to a week, or freeze without frosting for longer storage.
