Description

Delightful mashup cookies that combine the flavors of graham crackers, chocolate, and marshmallows, topped with a dreamy marshmallow fluff frosting.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 1 cup marshmallow fluff (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, graham cracker crumbs, baking soda, and salt. Gradually add the dry ingredients to the wet mixture until combined.
  5. Fold in the chocolate chips and mini marshmallows.
  6. Drop tablespoon-sized amounts of dough onto a lined baking sheet.
  7. Bake for 10-12 minutes until the edges are golden.
  8. Let cool completely.
  9. Once cooled, frost each cookie with marshmallow fluff and optionally toast with a kitchen torch for extra flavor. Enjoy!

Notes

For a slightly gooier center, consider underbaking the cookies. Store in an airtight container for up to a week, or freeze without frosting for longer storage.
