Description

Ingredients

  • 1 lb ground beef
  • 1 small cabbage, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup shredded cheddar cheese
  • 2 cups Fritos
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Brown beef in a large skillet over medium heat until fully cooked, breaking it apart as it cooks.
  2. Add diced onion and minced garlic to the skillet and sauté until fragrant and tender, about 3-5 minutes.
  3. Stir in chopped cabbage and canned diced tomatoes, mixing well to combine.
  4. Season the mixture with chili powder, cumin, paprika, salt, and pepper, adjusting to taste.
  5. Allow to simmer for 10-15 minutes until cabbage is tender.
  6. Sprinkle shredded cheddar cheese on top just before serving, allowing it to melt into the mixture.
  7. Top with crunchy Fritos for added texture.

Notes

For a lighter option, substitute ground turkey or chicken. You can also replace cabbage with kale. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
