- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Brown beef in a large skillet over medium heat until fully cooked, breaking it apart as it cooks.
- Add diced onion and minced garlic to the skillet and sauté until fragrant and tender, about 3-5 minutes.
- Stir in chopped cabbage and canned diced tomatoes, mixing well to combine.
- Season the mixture with chili powder, cumin, paprika, salt, and pepper, adjusting to taste.
- Allow to simmer for 10-15 minutes until cabbage is tender.
- Sprinkle shredded cheddar cheese on top just before serving, allowing it to melt into the mixture.
- Top with crunchy Fritos for added texture.
Notes
For a lighter option, substitute ground turkey or chicken. You can also replace cabbage with kale. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
