- 1 cup cranberry sauce (preferably homemade or low-sugar canned)
- 1 package (8 oz) cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 4 large flour tortillas
- 1 cup chopped nuts (optional – walnuts or pecans preferred)
- Fresh cranberries or parsley for garnish (optional)
Instructions
- In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Whip with a hand mixer or whisk until smooth and creamy, no lumps visible.
- Lay a flour tortilla flat on a clean surface. Spread a generous, even layer (about 1/4–1/3 cup) of the cream cheese mixture over the entire tortilla, leaving a small edge clear for easier rolling.
- Spoon cranberry sauce evenly over the cream cheese. Spread gently to avoid tearing the tortilla.
- If desired, sprinkle chopped nuts evenly atop the cranberry layer.
- Roll each tortilla tightly from one end to the other. Wrap each roll in plastic wrap tightly and refrigerate for at least 1 hour.
- Remove rolls from the fridge and unwrap. Using a sharp knife, cut each roll into 1-inch pinwheels. Arrange on a festive serving platter.
- Add fresh cranberries or parsley sprigs around the pinwheels for a bright, festive touch.
Notes
These roll ups can be made ahead and stored in the refrigerator. Use a sharp serrated knife for clean slices.
