Ingredients

- 2 cooked chicken breasts, shredded
- 1 avocado, mashed
- 1 cup shredded cheese (such as cheddar or mozzarella)
- 4 slices of bread (your choice)
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- Butter (for grilling)
Instructions
- In a bowl, combine the shredded chicken, mashed avocado, salt, and pepper.
- In another small bowl, mix together the mayonnaise and Dijon mustard.
- Spread the mayo mixture on one side of each slice of bread.
- Layer the chicken avocado mixture and shredded cheese between two slices of bread, mayo side facing in.
- Heat a skillet over medium heat and butter the outside of the sandwiches.
- Grill the sandwiches for about 4-5 minutes on each side or until golden brown and cheese is melted.
- Serve warm and enjoy!
Notes
Consider adding sliced tomatoes or jalapeños for a fresh twist. For a vegetarian option, swap the chicken for a hearty black bean blend.
