- 1 lb flank steak, thinly sliced against the grain
- 1 cup bell peppers, sliced (mix of red, yellow, and green)
- 1 medium yellow onion, thinly sliced
- 3 tbsp soy sauce, divided
- 3 cloves garlic, minced
- 1 tbsp cornstarch, mixed with water (for slurry)
- 1 tbsp sesame oil, plus more for cooking
- ½ tsp ground black pepper
Instructions
- In a bowl, combine 2 tbsp soy sauce, minced garlic, cornstarch, and black pepper. Toss the steak slices to coat. Marinate for 20 minutes (up to 2 hours for deeper flavor).
- Slice the onions and bell peppers into even pieces. Set aside.
- Heat 1 tbsp sesame oil in a skillet or wok over medium-high heat. Sear the beef strips until browned, about 4 minutes. Remove and set aside.
- In the same skillet, add onions and cook for about 2 minutes. Then, add the bell peppers and stir-fry until tender-crisp, around 3 minutes.
- Return the beef to the skillet. Stir in 1 tbsp soy sauce, ensuring even coating. Pour in the cornstarch slurry, cooking until thickened, roughly 1 minute.
- Garnish with chopped green onions if desired, and serve hot over rice or noodles.
Notes
Slice beef against the grain for tenderness and avoid overcrowding the skillet for proper sear.
