- 200 g Unsalted Butter
- 150 g Brown Sugar
- 250 g All-Purpose Flour
- 3 large Eggs
- 300 g Mixed Dried Fruit
- 100 ml Brandy
- 1 tsp Baking Powder
- 200 g Marzipan
- 200 g Fondant
Instructions
- Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
- Cream together the unsalted butter and brown sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition.
- Gradually fold in the all-purpose flour and baking powder until just combined.
- Mix in the mixed dried fruit evenly throughout the batter.
- Pour the batter into the prepared baking tray and smooth the top.
- Bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.
- Allow the traybake to cool completely before decorating with marzipan and fondant.
Notes
For extra moisture, soak the mixed dried fruits in brandy (or apple cider) before adding to the batter. Use parchment paper to line the tray for easy removal.
