Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Brown the beef pieces in batches until they are nicely seared on all sides.
- Transfer the browned beef to the crockpot.
- Add the carrots, potatoes, onion, garlic, thyme, bay leaf, and beef broth to the crockpot.
- Season with salt and pepper according to taste.
- Stir everything gently to combine all the ingredients.
- Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
- Remove the bay leaf before serving. Enjoy your comforting meal!
Notes
For extra flavor, add a splash of red wine before cooking. You can substitute beef with chicken for a lighter option or add additional vegetables as desired.
