Description

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the beef pieces in batches until they are nicely seared on all sides.
  2. Transfer the browned beef to the crockpot.
  3. Add the carrots, potatoes, onion, garlic, thyme, bay leaf, and beef broth to the crockpot.
  4. Season with salt and pepper according to taste.
  5. Stir everything gently to combine all the ingredients.
  6. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  7. Remove the bay leaf before serving. Enjoy your comforting meal!

Notes
