Description

A comforting blend of tender beef and caramelized onions, this slow-cooked pot roast is perfect for cozy dinners or gatherings.

Ingredients

Scale
  • 3–4 lb chuck roast (well-marbled)
  • 2 tablespoons olive oil (for browning, optional)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • 2 bay leaves
  • 3 large yellow onions, thinly sliced (about 4 cups)
  • 1 large sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 2 tablespoons unsalted butter
  • 1 1/2 cups beef broth (low-sodium preferred)
  • 1/2 cup dry white wine (or more broth)
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoon cornstarch + 3 tablespoons cold water (for thickening, optional)
  • 1 cup shredded Gruyère or Swiss cheese (optional)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Prepare the onions: Peel and slice the onions and mince the garlic. Add butter, onions, garlic, brown sugar, and balsamic vinegar to the crock pot. Cook for 20–30 minutes until softened.
  2. Prepare the roast: Pat the chuck roast dry and season with salt and pepper. Sear in olive oil for 2–3 minutes on each side if desired.
  3. Combine ingredients: Place the roast on top of the onions in the crock pot and sprinkle with thyme and bay leaves.
  4. Liquid goodness: Pour in beef broth, white wine, and Worcestershire sauce. Make sure the roast is partially submerged.
  5. Slow cook: Set the crock pot to low for 8–9 hours or high for 5–6 hours. Check for fork-tenderness after 7 hours.
  6. Thicken the gravy: Remove the roast and skim off excess fat. Mix cornstarch and cold water, stir into the broth, and cook on high until thickened (10–15 minutes).
  7. Final touches: Let the roast rest for 10 minutes before slicing or shredding. Return to the crock pot and spoon onion gravy over it. Garnish with cheese and parsley if desired.

Notes

Serve with crusty bread, mashed potatoes, or roasted vegetables. Browning the roast adds flavor but is optional.
