  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté minced garlic for 1 minute until fragrant.
  2. Add sun-dried tomatoes to the skillet and cook for an additional 2 minutes, allowing them to soften.
  3. Pour in your choice of broth and let it simmer for 3 minutes, enhancing the flavors.
  4. Introduce the butter beans to the mixture, warming them through.
  5. Stir in the cream (or coconut cream) and simmer until the sauce thickens and is creamy.
  6. Add fresh spinach, letting it wilt into the mixture.
  7. Season the dish with salt, pepper, and a pinch of red pepper flakes. Finish with a splash of lemon juice for brightness.
