- 300 grams pasta (fettuccine or penne)
- 500 grams boneless, skinless chicken breasts, cut into bite-sized pieces
- 250 grams ricotta cheese
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Optional: Italian seasoning or red pepper flakes
Instructions
- Boil salted water in a large pot. Add the pasta and cook until al dente, about 8–10 minutes. Reserve 120 ml of pasta water before draining.
- In a large skillet, heat the olive oil over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until golden brown and cooked through.
- Lower the heat and add ricotta cheese and reserved pasta water, whisk until smooth and creamy. Add optional seasoning for flavor.
- Combine the cooked pasta with the sauce and chicken, tossing until evenly coated.
Notes
For a professional touch, use fresh ricotta and consider adding sautéed mushrooms or sun-dried tomatoes.
