Ingredients

  • 300 grams pasta (fettuccine or penne)
  • 500 grams boneless, skinless chicken breasts, cut into bite-sized pieces
  • 250 grams ricotta cheese
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Optional: Italian seasoning or red pepper flakes

Instructions

  1. Boil salted water in a large pot. Add the pasta and cook until al dente, about 8–10 minutes. Reserve 120 ml of pasta water before draining.
  2. In a large skillet, heat the olive oil over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until golden brown and cooked through.
  3. Lower the heat and add ricotta cheese and reserved pasta water, whisk until smooth and creamy. Add optional seasoning for flavor.
  4. Combine the cooked pasta with the sauce and chicken, tossing until evenly coated.

Notes

For a professional touch, use fresh ricotta and consider adding sautéed mushrooms or sun-dried tomatoes.
