- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 cups finely chopped pistachios
- 3 large eggs
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 325°F (160°C).
- Combine the graham cracker crumbs with the melted butter. Press the mixture into the bottom of a greased 9×13-inch baking pan.
- Beat together the softened cream cheese, sugar, and vanilla extract until smooth.
- Stir in the chopped pistachios until evenly distributed.
- Add the eggs, one at a time, mixing thoroughly after each addition.
- Gently stir in the heavy cream until smooth.
- Pour the cheesecake mixture over the prepared crust and spread evenly.
- Bake for 30-35 minutes, or until the center is set with a slight jiggle.
- Cool to room temperature, then chill in the refrigerator for at least four hours before cutting into bars.
- Serve chilled and enjoy!
