Description

Indulge in these creamy pistachio cheesecake bars with a rich filling and nutty crunch, all atop a buttery graham cracker crust.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups finely chopped pistachios
  • 3 large eggs
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Combine the graham cracker crumbs with the melted butter. Press the mixture into the bottom of a greased 9×13-inch baking pan.
  3. Beat together the softened cream cheese, sugar, and vanilla extract until smooth.
  4. Stir in the chopped pistachios until evenly distributed.
  5. Add the eggs, one at a time, mixing thoroughly after each addition.
  6. Gently stir in the heavy cream until smooth.
  7. Pour the cheesecake mixture over the prepared crust and spread evenly.
  8. Bake for 30-35 minutes, or until the center is set with a slight jiggle.
  9. Cool to room temperature, then chill in the refrigerator for at least four hours before cutting into bars.
  10. Serve chilled and enjoy!

Notes

Serve with a dollop of whipped cream or crushed pistachios on top and pair with fresh berries or coffee.
