Ingredients

  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 lb fresh mushrooms, sliced
  • 2 tbsp all-purpose flour
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt and black pepper, to taste
  • Fresh thyme or parsley (optional)

Instructions

  1. In a large pot, melt butter over medium heat.
  2. Add the chopped onion. Sauté until softened, which should take about 3-4 minutes. Then add the minced garlic and cook for an additional minute.
  3. Stir in the sliced mushrooms and sauté until they are tender and start to turn golden brown, roughly 5-7 minutes.
  4. Sprinkle in the flour, cooking while constantly stirring for 1-2 minutes to form a roux.
  5. Gradually add the broth, whisking continuously to keep the mixture smooth.
  6. Allow the soup to simmer for 10-15 minutes, letting all the flavors meld beautifully.
  7. Stir in the heavy cream, seasoning with salt and pepper. Depending on your texture preference, blend the soup partially with an immersion blender or blend fully until silky smooth.

Notes

Serve with crusty bread or a light salad. Can be garnished with fresh thyme or parsley for added flavor.
