- 1 cup Arborio rice
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup cremini mushrooms, sliced
- 1/2 cup dry white wine
- 4 cups chicken or vegetable broth, kept warm
- 1/2 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 2 tablespoons butter
- 12 large sea scallops
- Salt and freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until softened, about 3 minutes.
- Introduce the mushrooms to the pan. Cook until tender and their juices are released, about 5 minutes.
- Pour in the Arborio rice and stir well to coat the grains with the oil and vegetables; cook for another 2 minutes.
- Add the white wine and stir continuously until most of the wine is absorbed.
- Incorporate the warm broth, one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more, until the rice is creamy and just tender, about 18-20 minutes.
- Stir in the Parmesan cheese, heavy cream, and 1 tablespoon of butter. Season with salt and pepper to taste. Keep warm.
- Pat the scallops dry with paper towels and season with salt and pepper.
- Heat the remaining olive oil and butter in another skillet over high heat, then add the scallops, searing for 2-3 minutes on each side until a golden crust forms.
- Serve the risotto in bowls topped with the seared scallops, garnished with chopped parsley before serving.
Notes
For the best results, use warm broth and also consider adding a squeeze of lemon juice at the end to brighten the flavors.
