Ingredients

  • 1 cup rolled oats
  • 2 cups coconut milk
  • 1/2 cup shredded coconut
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Fresh fruit or nuts for topping (optional)

Instructions

  1. In a medium saucepan, combine the rolled oats, coconut milk, shredded coconut, honey or maple syrup, vanilla extract, and a pinch of salt.
  2. Bring the mixture to a boil over medium heat.
  3. Once boiling, reduce the heat and let it simmer for about 5-7 minutes. Stir occasionally until the oats are cooked and the mixture is creamy.
  4. After reaching the desired creaminess, remove from heat and let it sit for a minute.
  5. Serve warm, topped with fresh fruit or nuts if desired.

Notes

For creamier texture, cook the oats a bit longer on low heat. Use a non-stick saucepan to prevent sticking.
