Instructions
- In a medium saucepan, combine the rolled oats, coconut milk, shredded coconut, honey or maple syrup, vanilla extract, and a pinch of salt.
- Bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat and let it simmer for about 5-7 minutes. Stir occasionally until the oats are cooked and the mixture is creamy.
- After reaching the desired creaminess, remove from heat and let it sit for a minute.
- Serve warm, topped with fresh fruit or nuts if desired.
Notes
For creamier texture, cook the oats a bit longer on low heat. Use a non-stick saucepan to prevent sticking.
