Instructions
- In a small bowl, dissolve the gelatin in cold water and let it sit for 5 minutes.
- In a medium saucepan, heat the cranberry sauce and sugar over low heat until the sugar dissolves.
- Remove the saucepan from heat, and stir in the dissolved gelatin until fully combined.
- In a large bowl, whip the heavy cream until soft peaks form.
- In another bowl, beat the cream cheese and vanilla extract until smooth.
- Carefully fold the whipped cream into the cranberry mixture, then gently fold in the cream cheese until fully incorporated.
- Spoon the mousse into serving dishes and refrigerate for at least 2 hours before serving.
Notes
For a twist, consider using Greek yogurt instead of cream cheese, or fresh cranberries in place of cranberry sauce. Garnish with fresh cranberries or mint for added flair.
