- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/4 teaspoon cream of tartar
- Food coloring (optional)
- Filling of your choice (e.g., buttercream, ganache, jam)
Instructions
- Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the almond flour and powdered sugar until well combined.
- In a separate bowl, beat egg whites and cream of tartar until foamy. Gradually add granulated sugar, continuing to beat until stiff peaks form. If desired, incorporate food coloring at this stage.
- Gently fold the dry mixture into the egg whites until the batter is smooth and shiny.
- Transfer the batter to a piping bag and pipe small circles onto the prepared sheets.
- Allow the piped batter to sit for 30-60 minutes to form a skin.
- Bake for 15-20 minutes, rotating halfway through, until macarons have risen and set.
- Let them cool thoroughly before removing from parchment.
- Pair the shells and fill with your preferred filling, then sandwich them together.
Notes
To achieve stable meringue, use aged egg whites and be gentle when folding in the dry ingredients.
