  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 8 tortillas
  • 2 cups red enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add the onion and garlic, sauté until soft.
  3. Incorporate the ground beef into the skillet. Cook until browned. Season generously with chili powder, salt, and pepper.
  4. Warm the tortillas in a dry skillet or microwave to make them pliable.
  5. Spoon some of the beef mixture onto each tortilla. Roll them up tight and place seam-side down in a baking dish.
  6. Pour the red enchilada sauce over the top of the rolled enchiladas.
  7. Sprinkle the shredded cheese evenly over the sauce.
  8. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  9. Serve hot, garnished with sour cream, avocado, or fresh cilantro if desired.

Notes

For a healthier alternative, consider using lean ground turkey or adding black beans for more fiber. Serve with a fresh side salad or guacamole.
