- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 8 tortillas
- 2 cups red enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the onion and garlic, sauté until soft.
- Incorporate the ground beef into the skillet. Cook until browned. Season generously with chili powder, salt, and pepper.
- Warm the tortillas in a dry skillet or microwave to make them pliable.
- Spoon some of the beef mixture onto each tortilla. Roll them up tight and place seam-side down in a baking dish.
- Pour the red enchilada sauce over the top of the rolled enchiladas.
- Sprinkle the shredded cheese evenly over the sauce.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
- Serve hot, garnished with sour cream, avocado, or fresh cilantro if desired.
Notes
For a healthier alternative, consider using lean ground turkey or adding black beans for more fiber. Serve with a fresh side salad or guacamole.
