Description

Delightful and festive macarons shaped like Christmas trees, featuring almond flour shells and a rich, buttery filling with crumbled snack cakes.


Ingredients

  • 1 3/4 cups (175g) powdered sugar
  • 1 cup (100g) almond flour (finely ground, blanched)
  • 3 large egg whites (about 90g), room temperature
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon cream of tartar
  • Green gel food coloring
  • 1/2 cup (113g) unsalted butter, softened
  • 1 1/2 cups (150g) powdered sugar (for filling)
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons heavy cream
  • 1/2 cup (85g) finely crumbled snack cakes (Christmas Tree Cakes or similar)
  • Pinch of salt (for filling)
  • White chocolate drizzle (for decoration)
  • Red and green sprinkles (for decoration)
  • Edible gold stars (optional, for decoration)

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift together powdered sugar and almond flour into a large bowl.
  3. In a clean, grease-free bowl, beat egg whites and cream of tartar until frothy, then gradually add granulated sugar until stiff peaks form. Add food coloring to desired shade.
  4. Fold sifted dry ingredients into the meringue mixture in batches until smooth.
  5. Transfer batter to a piping bag and pipe small circles onto the baking sheets.
  6. Let the piped shells rest at room temperature for 30-60 minutes until they form a dry skin.
  7. Bake for 15-18 minutes, rotating trays halfway through and checking for easy removal.
  8. Beat softened butter, powdered sugar, vanilla extract, heavy cream, and salt until smooth. Fold in crumbled snack cakes.
  9. Once shells cool, pipe filling onto one shell, sandwich with another shell, then drizzle with white chocolate and decorate as desired.

Notes

Allow macarons to improve in flavor by refrigerating for 24 hours after assembly. Ensure egg whites are at room temperature for best volume.
