Description

A delightful blend of tender chicken, crisp zucchini, and rice noodles enveloped in savory soy sauce, ideal for a quick and satisfying meal.


Ingredients

  • 1 lb chicken breast
  • 1 medium zucchini
  • 8 oz rice noodles
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp sesame oil or vegetable oil
  • Salt to taste
  • Pepper to taste
  • 1 onion, sliced

Instructions

  1. Cook the rice noodles according to package instructions.
  2. Slice the chicken, zucchini, and onion into pieces.
  3. Heat oil in a large pan, add garlic and ginger, then the chicken. Sauté until golden.
  4. Add the onion and zucchini, sauté for a few minutes.
  5. Mix in the cooked rice noodles and soy sauce, stirring well.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

For added flavor, marinate the chicken in soy sauce for 30 minutes before cooking. You can also substitute chicken with tofu or shrimp for variety.
