- 1 medium zucchini
- 8 oz rice noodles
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp sesame oil or vegetable oil
- Salt to taste
- Pepper to taste
- 1 onion, sliced
Instructions
- Cook the rice noodles according to package instructions.
- Slice the chicken, zucchini, and onion into pieces.
- Heat oil in a large pan, add garlic and ginger, then the chicken. Sauté until golden.
- Add the onion and zucchini, sauté for a few minutes.
- Mix in the cooked rice noodles and soy sauce, stirring well.
- Season with salt and pepper to taste.
- Serve hot.
Notes
For added flavor, marinate the chicken in soy sauce for 30 minutes before cooking. You can also substitute chicken with tofu or shrimp for variety.
