Ingredients

  • 1 whole chicken
  • 8 cups water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 cup egg noodles (optional)
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, place the whole chicken and cover it with water. Bring to a boil over medium-high heat.
  2. Add the carrots, celery, onion, garlic, salt, pepper, and bay leaf.
  3. Reduce the heat and let it simmer for about 60 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot. Let it cool before shredding the meat. Discard the bones and skin.
  5. Return the shredded chicken to the pot.
  6. If using, add the egg noodles and simmer until cooked through, about 7-10 minutes.
  7. Taste the soup and adjust the seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.

Notes

Customize the broth with seasonal vegetables or herbs for a fresh twist. Store leftovers in an airtight container for up to four days or freeze for up to three months.
