- 1 whole chicken
- 8 cups water
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 cup egg noodles (optional)
- Fresh parsley, for garnish
Instructions
- In a large pot, place the whole chicken and cover it with water. Bring to a boil over medium-high heat.
- Add the carrots, celery, onion, garlic, salt, pepper, and bay leaf.
- Reduce the heat and let it simmer for about 60 minutes until the chicken is cooked through.
- Remove the chicken from the pot. Let it cool before shredding the meat. Discard the bones and skin.
- Return the shredded chicken to the pot.
- If using, add the egg noodles and simmer until cooked through, about 7-10 minutes.
- Taste the soup and adjust the seasoning if necessary.
- Serve hot, garnished with fresh parsley.
Notes
Customize the broth with seasonal vegetables or herbs for a fresh twist. Store leftovers in an airtight container for up to four days or freeze for up to three months.
