- 1 pound boneless, skinless chicken breasts or tenders, cut into strips
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided
- 4 garlic cloves, minced
- 1/4 cup white wine or chicken broth
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh parsley
- 1 cup long grain white rice
- 2 1/4 cups chicken broth
- 2 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1/3 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Season the chicken with salt, pepper, and Italian seasoning. Sauté until golden and cooked through, about 6 to 8 minutes. Remove the chicken from the skillet and set it aside.
- In the same skillet, add the remaining 2 tablespoons of butter and minced garlic. Cook for 1 minute until fragrant. Deglaze the pan with white wine (or chicken broth) and add the lemon juice. Let this simmer for 2 to 3 minutes. Return the sautéed chicken to the pan and toss to coat it with the sauce. Sprinkle with parsley.
- Meanwhile, melt 2 tablespoons of butter in a saucepan. Sauté 2 garlic cloves until fragrant, about 1 minute. Add the rice, toasting it for 2 minutes while stirring continuously. Pour in the chicken broth and bring it to a boil. Reduce the heat, cover, and simmer for 18 to 20 minutes, or until the rice is tender. Stir in Parmesan cheese and season with salt and pepper to taste.
Notes
For extra flavor, marinate the chicken strips in lemon juice and Italian herbs for an hour before cooking. Use homemade chicken broth for richer taste and better nutritional value.
