Description

Crunchy, savory bundles of tender chicken, crispy bacon, and rich ranch dressing wrapped in low-carb tortillas.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bacon, cooked and crumbled
  • 1/2 cup ranch dressing
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Low-carb tortillas
  • Salt and pepper to taste
  • Cooking spray or oil for frying

Instructions

  1. In a bowl, mix together the shredded chicken, crumbled bacon, ranch dressing, and shredded cheese.
  2. Season the mixture with salt and pepper to taste.
  3. Take a low-carb tortilla and add a portion of the chicken-bacon mixture to the center.
  4. Roll the tortilla tightly to form a taquito.
  5. Repeat with the remaining tortillas and filling.
  6. Heat oil in a skillet over medium heat.
  7. Place the taquitos seam-side down in the skillet and cook until golden and crispy, about 3-4 minutes per side.
  8. Remove from the skillet and drain on paper towels before serving.
  9. Enjoy your taquitos with extra ranch dressing and toppings of your choice.

Notes

For extra flavor, consider adding spices like paprika or garlic powder to the chicken mixture. An air fryer can yield perfectly crispy taquitos without excess oil.
