  • 1 1/2 cups shredded Monterey Jack or mozzarella cheese
  • 8 small flour tortillas
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 (4 oz) can diced green chilies
  • 1/2 teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan over medium heat, melt the butter.
  3. Whisk in the flour and cook for about 1 minute until it turns a light golden color.
  4. Gradually add the chicken broth while whisking until smooth.
  5. Cook until the mixture thickens, stirring occasionally.
  6. Stir in the sour cream, diced green chilies, garlic powder, salt, and pepper until well combined.
  7. In a baking dish, spread a small amount of sauce on the bottom to prevent sticking.
  8. Fill each tortilla with a portion of shredded chicken and cheese, then roll them up, placing them seam side down in the dish.
  9. Pour the remaining sauce over the enchiladas and sprinkle the rest of the cheese on top.
  10. Bake for 20-25 minutes, or until the enchiladas are bubbly and golden brown.
