Description

Delightful mini meatloaves filled with gooey mozzarella, perfect for weeknight dinners and casual entertaining.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ketchup (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, egg, garlic powder, onion powder, salt, and pepper.
  3. Mix until just combined, being careful not to overmix.
  4. Take a small portion of the meat mixture and mold it into the shape of a small cup in each muffin tin compartment.
  5. Fill the center of each meat cup with shredded mozzarella cheese.
  6. Cover the cheese with more meat mixture, sealing it in.
  7. Top each stuffed meatloaf bite with a dollop of ketchup.
  8. Bake in the preheated oven for 20-25 minutes or until cooked through and golden on top.
  9. Let them cool slightly before removing from the muffin tin. Serve warm.

Notes

For a leaner version, substitute ground turkey for the beef, or use whole grain breadcrumbs for added nutrition.
