Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup ketchup (for topping)
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin.
- In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan cheese, milk, egg, garlic powder, onion powder, salt, and pepper.
- Mix until just combined, being careful not to overmix.
- Take a small portion of the meat mixture and mold it into the shape of a small cup in each muffin tin compartment.
- Fill the center of each meat cup with shredded mozzarella cheese.
- Cover the cheese with more meat mixture, sealing it in.
- Top each stuffed meatloaf bite with a dollop of ketchup.
- Bake in the preheated oven for 20-25 minutes or until cooked through and golden on top.
- Let them cool slightly before removing from the muffin tin. Serve warm.
Notes
For a leaner version, substitute ground turkey for the beef, or use whole grain breadcrumbs for added nutrition.
