- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1 can (20 oz) crushed pineapple, drained
- 1/2 cup brown sugar
- 1 tablespoon butter
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Combine graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of the prepared baking dish to form the crust.
- Blend the cream cheese, sugar, and vanilla until smooth in a separate bowl. Add the eggs one at a time, mixing well after each addition.
- Spread the cream cheese mixture evenly over the crust.
- In a small saucepan, melt the butter and brown sugar together. Add the drained crushed pineapple and cook for 5 minutes until slightly caramelized.
- Spread the caramelized pineapple mixture over the cheesecake layer.
- Bake in the preheated oven for 30-35 minutes or until the center is set.
- Allow to cool completely before cutting into bars. Serve chilled.
Notes
Drizzle with caramel sauce before serving for an indulgent touch. Pair with fresh mint, vanilla ice cream, or whipped cream for added texture and flavor.
