- 4 cups chopped green cabbage
- 1 medium onion, finely chopped
- 2 medium carrots, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp tomato paste (double concentrated)
- 4 cups low-sodium beef broth
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper (adjust to taste)
- 1 tsp dried thyme
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onions and carrots, sautéing until they soften and the onions become translucent.
- Stir in the minced garlic and tomato paste, cooking for about 2 minutes until fragrant.
- Add the ground beef to the pot. Break it apart using a spoon, and cook until nicely browned, about 5 to 7 minutes. Drain excess fat if necessary.
- Fold in the chopped cabbage and pour in the beef broth. Bring to a gentle boil, then reduce heat and let it simmer for 20 minutes.
- Taste the soup and season with salt, black pepper, and thyme to your liking before serving.
Notes
