  • 4 cups chopped green cabbage
  • 1 medium onion, finely chopped
  • 2 medium carrots, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste (double concentrated)
  • 4 cups low-sodium beef broth
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 1 tsp dried thyme
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onions and carrots, sautéing until they soften and the onions become translucent.
  2. Stir in the minced garlic and tomato paste, cooking for about 2 minutes until fragrant.
  3. Add the ground beef to the pot. Break it apart using a spoon, and cook until nicely browned, about 5 to 7 minutes. Drain excess fat if necessary.
  4. Fold in the chopped cabbage and pour in the beef broth. Bring to a gentle boil, then reduce heat and let it simmer for 20 minutes.
  5. Taste the soup and season with salt, black pepper, and thyme to your liking before serving.
