Description

A delightful twist on the classic grilled cheese, featuring fresh bruschetta flavors with gooey mozzarella.


Ingredients

  • 2 slices of sourdough or ciabatta bread
  • 1 cup mozzarella cheese, shredded
  • 1 cup tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon butter

Instructions

  1. Prepare the bruschetta mixture by combining diced tomatoes, chopped basil, olive oil, balsamic vinegar, salt, and pepper in a bowl.
  2. Butter one side of each slice of bread.
  3. Heat a pan over medium heat and place one slice of bread, butter side down, in the pan.
  4. Layer mozzarella cheese generously on top of the bread, followed by the bruschetta mixture.
  5. Place another slice of bread on top, butter side up.
  6. Grill until golden brown, about 3-4 minutes on each side, flipping carefully.
  7. Once both sides are golden and the cheese is melted, remove from heat, slice, and serve warm.

Notes

Serve with mixed greens and a drizzle of balsamic glaze or alongside tomato soup for a classic combination.
