A delightful twist on the classic grilled cheese, featuring fresh bruschetta flavors with gooey mozzarella.
Ingredients

- 2 slices of sourdough or ciabatta bread
- 1 cup mozzarella cheese, shredded
- 1 cup tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt, to taste
- Pepper, to taste
- 1 tablespoon butter
Instructions
- Prepare the bruschetta mixture by combining diced tomatoes, chopped basil, olive oil, balsamic vinegar, salt, and pepper in a bowl.
- Butter one side of each slice of bread.
- Heat a pan over medium heat and place one slice of bread, butter side down, in the pan.
- Layer mozzarella cheese generously on top of the bread, followed by the bruschetta mixture.
- Place another slice of bread on top, butter side up.
- Grill until golden brown, about 3-4 minutes on each side, flipping carefully.
- Once both sides are golden and the cheese is melted, remove from heat, slice, and serve warm.
Notes
Serve with mixed greens and a drizzle of balsamic glaze or alongside tomato soup for a classic combination.
