Delicious broccoli cheese balls that blend gooey cheese and vibrant broccoli, making them a perfect crowd-pleaser for any occasion.


Ingredients

  • 3 cups (300g) broccoli florets, finely chopped
  • 2 cups (200g) sharp cheddar cheese, freshly grated
  • 3/4 cup (75g) parmesan cheese, freshly grated
  • 2 large eggs, lightly beaten
  • 1/2 cup (60g) all-purpose flour
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried Italian herbs
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups (150g) panko breadcrumbs for coating
  • 3 tablespoons olive oil (for baking)

Instructions

  1. Bring a large pot of salted water to a boil. Blanch the broccoli florets for 2 minutes, then plunge into an ice bath. Once cool, drain and finely chop.
  2. In a large bowl, combine chopped broccoli with cheddar, parmesan, garlic, Italian herbs, nutmeg, salt, and pepper. Mix until even, then fold in beaten eggs and flour.
  3. Cover and refrigerate the mixture for at least 30 minutes to meld flavors.
  4. After chilling, scoop and roll the mixture into 1½-inch balls.
  5. Roll each ball in panko breadcrumbs, pressing gently to adhere.
  6. Cook using your preferred method: bake, air fry, or fry until golden brown and crisp.

Notes

For a richer flavor, use freshly grated cheese and experiment with different herbs or cheeses.
