- 3 cups (300g) broccoli florets, finely chopped
- 2 cups (200g) sharp cheddar cheese, freshly grated
- 3/4 cup (75g) parmesan cheese, freshly grated
- 2 large eggs, lightly beaten
- 1/2 cup (60g) all-purpose flour
- 3 cloves garlic, minced
- 1/2 teaspoon dried Italian herbs
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups (150g) panko breadcrumbs for coating
- 3 tablespoons olive oil (for baking)
Instructions
- Bring a large pot of salted water to a boil. Blanch the broccoli florets for 2 minutes, then plunge into an ice bath. Once cool, drain and finely chop.
- In a large bowl, combine chopped broccoli with cheddar, parmesan, garlic, Italian herbs, nutmeg, salt, and pepper. Mix until even, then fold in beaten eggs and flour.
- Cover and refrigerate the mixture for at least 30 minutes to meld flavors.
- After chilling, scoop and roll the mixture into 1½-inch balls.
- Roll each ball in panko breadcrumbs, pressing gently to adhere.
- Cook using your preferred method: bake, air fry, or fry until golden brown and crisp.
Notes
For a richer flavor, use freshly grated cheese and experiment with different herbs or cheeses.
