Description

A delightful dessert that captures the essence of summer with bright, juicy berries and a fluffy, moist texture.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups fresh blueberries (tossed with 1 tbsp flour)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, incorporating each fully before adding the next, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually incorporate this dry mixture into the wet ingredients, alternating with the milk.
  5. Gently fold in the blueberries that have been dusted with flour.
  6. Pour the mixture into your prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, allow to cool before dusting with powdered sugar and serving.

Notes

Serve with whipped cream or vanilla ice cream for an elegant touch. Store in an airtight container for up to three days.
