  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil, divided
  • 1 onion, chopped
  • 2 cups sliced mushrooms (button, cremini, or shiitake)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • ¼ cup water
  • Freshly ground black pepper, to taste
  • Green onions for garnish (optional)

Instructions

  1. Prepare the chicken by slicing into thin strips and tossing with cornstarch, salt, and black pepper.
  2. Sear the chicken in hot oil until golden brown, about 5-7 minutes.
  3. Cook the chopped onion and sliced mushrooms in the remaining oil for about 5 minutes until softened.
  4. Build the sauce by adding minced garlic, soy sauce, oyster sauce, sesame oil, and water; simmer for a minute.
  5. Combine the cooked chicken with the sauce and mix thoroughly, heating through for 1-2 minutes.
  6. Serve the dish garnished with green onions and alongside steamed rice or noodles.
