Ingredients

  • 1 pound collard greens, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tablespoon olive oil
  • 4 cups vegetable broth
  • 1 teaspoon cayenne pepper
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Cooked sausage or ham (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, bell pepper, and minced garlic, and sauté until softened.
  3. Stir in the collard greens and cook until they begin to wilt.
  4. Add vegetable broth, cayenne pepper, smoked paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and let simmer for about 30-40 minutes, or until the greens are tender.
  6. If using, add cooked sausage or ham and simmer for an additional 10 minutes.
  7. Serve warm.
