- 1 pound collard greens, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 tablespoon olive oil
- 4 cups vegetable broth
- 1 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Cooked sausage or ham (optional)
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion, bell pepper, and minced garlic, and sauté until softened.
- Stir in the collard greens and cook until they begin to wilt.
- Add vegetable broth, cayenne pepper, smoked paprika, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 30-40 minutes, or until the greens are tender.
- If using, add cooked sausage or ham and simmer for an additional 10 minutes.
- Serve warm.
