Description

Elevate simple onions into a gourmet appetizer with sweet, caramelized layers and rich Asiago cheese.


Ingredients

  • 4 large yellow onions
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped fresh thyme or parsley
  • 1 cup shredded Asiago cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice onions into ¾-inch thick rounds, removing loose outer skins.
  3. Heat the butter and olive oil in an oven-safe skillet over medium heat until melted and bubbling.
  4. Add sliced onions to the skillet and sear for 2–3 minutes per side, sprinkling with salt and pepper.
  5. Transfer the skillet to the oven and bake for 15–20 minutes, or until onions are tender.
  6. Top each onion slice with shredded Asiago cheese.
  7. Return the skillet to the oven and broil for 2–4 minutes, or until cheese is bubbly and golden.
  8. Garnish with fresh thyme or parsley and serve hot.

Notes

For best results, use firm onions and sear them to enhance sweetness. Leftovers can be stored in the refrigerator for up to three days.
